Warning light?

I found that on FTO's there is this exhaust warning light in the left lower instrument cluster (just under the oil the battery warning light)
Mine doesn't go on for those few seconds with the rest of them on start up. What does this light signify??

its for the exhaust temperature light..when it goes on it means that its way too hot.

Perhaps it means "Warning: Your muffler just fell off"

And why does it need to warn you the exhaust got too hot? What can happen from this?
Is the sensor visible on the exhaust? I am not sure if I have one

If the exhaust overheats there can be some problems. Check the FTO manual for a more detailed definition.

That's what I'm thinking too Loridin
Especially as the exhaust and even cat is not an FTO item
I'll see if he can connect/find it for me though

From the looks of it, if the sensor is located somewhere along the exhaust line, maybe charlie didn't get this part when he did your conversion, or if its located in the headers then it may not be connected, it really depends where its meant to be.
Now i'm wondering if people who add an aftermarket exhaust system have this issue, do they adapt this sensor to their new exhaust system or is it completely removed

It is positioned just after the cat normally. If you are changing/have changed your exhaust you can just weld a bung in after the cat and screw it in.
If you want to run without it, remove it and put a 100k ohm resistor on the plug that connects to the sensor. It is normally located under the drivers seat.
I dont know if it was carried over in your conversion - it might have been snipped off.
