It takes a little while to start moving from a cold start (under the bottom/left line) then it rises until it gets to just under half, stays there for another little while then starts climbing up again. I have never let it get to above 3/4.

You need to get hold of an infra-red gauge and point it directly at something on the hot side of the coolant flow (upper rad hose, thermostat housing, etc). Leave the engine running and use the temp given by the infra-red gauge to tell whether to turn it off or not. You need to determine whether or not it's the gauge reading incorrectly or the sensor earthing out at the wrong temperature. The only way of doing that is to measure the actual temp of the water coming out of the engine and just before it enters the radiator.
