So that compressor work Matt?

For the high idle, check for vac leaks, check lines in & out of TB etc

Could also adjust idle screw. Where does it idle when AC is not on during first start?

So the car is in part when revving high? No matter warm or cold? A faulty ISC causes high idling in part and menstrual when bad.

I do recall an engine mount being replaced considering there is more than one... Have you thought of checking the other engine mounts??? This will cause an undue amount of extra "whip lash" as you refer to it as, during gear change even at a high idle...!

Starting the car with the A/C on isn't always the best of things to do. Try like Ben said to adjust the Idle Mixture Screw. If all else fails check your other peripherals Ie. Stepper Motor and TPS... Hard to say considering that the A/C hasn't worked ever since the car was acquired from the previous owner :(

That poor thing has been though a lot! :'(
