Yes my roof was the worst i've ever seen in FTO's, and the worst many have seen. It was dam Terrible. I would reconmend the guy that did it to you, yes. He did a dam good job. You could even check it out anyway.
In regards to your pink slip question, I have no idea, mine was terrible and very obvious, if your bubbles are small and you don't have many you might be able to get through it dodgly

when your rust problems were fixed stef, how did the guy repaint it? was the whole panel painted ? or just the portion ?

^ i think the previous owner did the same thing with mine, unfortunately, the rust was not taken off, they simply sanded off the bubbles then repainted. $800 is not too bad at all!

though i've removed all the glue and rust primered and painted(with leftover blue caliper paint. lol) but i couldn't remove the glue thats within an inch away from the sunroof cavity (the 4 tight corners) even after removing the sunroof itself. Should have used a longer flat metal tool to reach it though...

I still have rust on the attuall sunroof but theres nothing I could really do about it.

Eh, i already had to re-wire mine so yeah would have to get the SCU too (sunroof control unit) .... Anyway I prefer the new switch I have

Alright so, I don't know if i Mentioned it earlier but the Black FTO is Booked in for the Repairable Write off check in september. SO if it passes through that it'll have rego & will be running everyday, hoo-rah... Finally..
Anyway, I have decided to go down to Sydney for AutoSalon to see you boys, and to catchup,
... So, because my memory is shocking I need to write down my list of things to do to my car before November.
• Put on my new Steering Wheel.
• Re-Wire & Clean up amp wiring in the boot
• Touch up & Re-fit Side Skirts
• Put on new "Vortex" Rearbar & paint.
• Install my Door-card Lights
• Install my Footwell white LED's
• Chuck on my front strut brace & decide if I want the rear one.
• Fix up my kick plates/get new ones.
• Replace my carpet (as in japan it had a rollcage and has a few cuts in it)
• New dials
• Replace Oil Temp gauge with a clock
• Install Stainless steel dash kit.
• Paint calipers.
I know I'm not going to be able to get all of these done due to money restraints but gonna try anyway.
And later in time,
• Alarm
• Window Lift Kit
• Hydraulic bonnet lift kit.
• Bigger Tyres
• More to be added when I think of them.

You should be able to do 215's man, i do with no scuff and mines lower than yours. Whats the actual profile of the tyre, mine are 40's?
