Probably the switch on the handbrake sticking. Have you taken the boot off and had a look underneath

Are you sure its the switch?

I only ask because the same light is used to show low fluid, a fairly cheap way of advising you of pad wear

Have you tried any of the above yet Jono?

1st port of call - the plunger switch. Take out cup holder and the compartment between the seats to get to it. Lot of crud builds up down there, so clean the switch, oil it, check the wires.

Still bad? Check the brake fluid. Then brake pads. Then you find yourself a nice mitsubishi mechanic and marry his daughter.
If you can't dazzle them with dexterity, baffle them with bull...

The brake fluid resevoir also has a sensor that can bring that light up. Hows your fluid level? If you fluid level drops & the inner seal in the cap of the cylinder gets sucked down with the vacuum pressure, it will send that light on.

If it actual is the handbrake sensor that causing it, just pull it out & clean it. its right under the handbrake.
