Just put in "car detailing _your suburb" in google and go for it, you'll find plenty of mobile upholstery ones, or small shops.

Not so sure about interior, but from what I have heard Dan @ DMS Detailing in Castle Hill is considered to be about the best in Sydney.
Might not be the cheapest though.
