is +48 an acceptable offset for 17"x7" wheels that will probably have 215's?

Wheel offsets
Width 6.5 Offset +20mm to +50mm (reg.*+38mm)
Width 7.0 Offset +25mmto +45mm
Width 7.5 Offset +30mm to +39mm
Width 8.0 Offset +35mm

Rule of thumb - take the lowest offset you can fit inside the guards, then go for 10mm lower (ie further out) and stretch narrow tyres onto the rims. 8)
