It's not the fsns themselves. And now they don't work at all.

They were on and off before, sometimes worked sometimes didn't. Now not at all. Hmmm!

Trace all the wiring, and check for any splits/loose connections?

So wire 12 volts direct into them to see if they work. Start eliminating things.

Maybe your new coolant sensor isn't working.
Unplug the wire from the sensor and bridge/connect the 2 terminals on the plug, start your engine and your fans should turn on. Even with the coolant not hot yet.
You can test the sensor if you have a multimeter...

Anyone else got any suggestions? Im kinda at a dead end here.

Thermostat is new.
Coolant temp sensor is new.
Coolant is new and full.
Radiator pipes are new Samcos.
Fuse is fine.
Relay is fine.
Fans work (with aircon on)
Not throwing any codes at me.
ECU wires are all plugged in properly.
ECU has been reset.

What else could it be? Only thing I can think of is that the water pump is fucked but how would that effect the fans not kicking in?
I fix cars.

Did you wire up the fans to constant power ... :?: If they work, it is not the fans.. Maybe they just aren't receiving the signal from the sensor???
I just had to add it ......

Heheheh .. I am noob squared when it comes to electrical... I would assume each fan has a negative and power... So they should plug in somewhere to the sender that sends power when they need to kick in...
I just had to add it ......

But fans and things were working before ... So if this was the case, would this not have happened when the radiator flush was fist done by Bennoz...

I doubt it. Im pretty sure Bennoz flushed it when he did the thermostat. That would also mean that the fans would still kick in sometimes, wouldn't it?

Surely it has to be an electrical/sensor issue.

I would say so... Fans use to kick in when the car was just above half/ around 3/4 at latest... And would bring temp down to spot on half...
